Delish! WINTER SOUP REPAIR February 7th, 2023

Week #2: Sisters' Sun-dried Tomato Chickpea Soup

My first pot of this soup was shared many years ago with dear previous co-workers from North Ridge. Every time I eat it I remember the laughter shared on that day and my heart smiles. You will need a big pot and a stick blender and the following ingredients:

  • 1 med onion, chopped

  • 3 cloves garlic, minced

  • 2 carrots, chopped

  • 2 stalks celery, chopped

  • half zucchini, chopped

  • 1 tbsp olive oil

  • large can (or 3 1/2 C cooked) chickpeas

  • 1 x 14oz can crushed tomatoes

  • 6 sun-dried tomatoes, chopped

  • 1 tsp cumin

  • 1/8 tsp cayenne pepper

  • 1/8 tsp black pepper

  • 1/2 tbsp balsamic vinegar

  • 1 tbsp soy sauce

  • 2 C vegetable stock

  • 1/4 C fresh parsley, minced



1) Heat oil over medium heat and saute onions, garlic, carrot, celery, zucchini until onions are translucent.







2) Add chickpeas, tomatoes, all seasonings, and stock. Let simmer for 20 mins until carrots are tender.








3) Blend until smooth with a stick blender then stir in parsley to serve.
